Moon River Fried Fish Fillets

  • 1 egg, beaten
  • 1/2 c. buttermilk
  • 1 T. hot sauce
  • 1/4 tsp. salt
  • 1/2 c. cornmeal
  • 1/2 c. fine cornflake crumbs
  • 4 catfish fillets
  • Oil for frying
  • 1 bell pepper, sliced
  • 1 med. onion, sliced
  • 3 T. oil
  • 3 T. flour
  • 1/4 c. canned okra and tomatoes, un-drained

In shallow pan, combine eggs, buttermilk, hot sauce and salt. Blend and set aside. In shallow pan, combine cornmeal and cornflake crumbs. Dip each fillet in buttermilk mixture then dredge in cornmeal mixture .Fry in hot oil until golden brown on both sides. Remove and drain on paper towels and keep warm in oven. In same skillet, saute bell pepper and onion until tender Remove and set aside.in separate skillet, heat 3 T. of oil and blend in flour, cooking over medium heat to a dark, golden roux. Stir in tomatoes and okra along with peppers and onions stirring all the while to prevent lumps. Add enough water, whisking while adding to create a medium thick gravy. Season with salt and pepper to taste and serve over fish fillets.
