Sunday Morning Chicken

  • 3 cups chicken
  • 1 cup uncooked rice
  • 1/2 envelope dehydrated onion soup
  • 1/2 stick butter
  • 1/4 cup bell pepper, chopped
  • 3 cups chicken stock
  • 1 can chicken OR mushroom soup
  • 1 pimento, chopped (optional)
  • 1 small can water chestnuts, sliced (optional)
  • 1/2 cup bread crumbs, buttered
  • Paprika

Steam chicken, bone and cut in bite size pieces. Arrange in buttered casserole. Add rice, sprinkle with dehydrated onion soup. Saute' bell pepper in butter about 10 minutes. Add stock and chicken or mushroom soup. If using pimento and water chestnuts, add at this time. Heat until bubbly, pour over other ingredients in casserole. Top with buttered bread crumbs. Sprinkle with paprika. Cover dish with lid or foil. Place in 250 degree oven as you leave for Sunday School and Church. When you return your Sunday Chicken is ready to serve. May be baked at 350 degrees in 1-1/4 hours.
