Description: A collection of recipes and remembrances in tribute to the Alonzo & Esther (Luster) Stamps Family. A family of 11 living in rural Arkansas, Texas and Oklahoma. The history begins with the birth of the first child in 1910 and provides a glimpse of their early life working in the pine forests and peach orchards of Arkansas, life as sharecroppers in west Texas and the relocation to Wapanucka, Oklahoma in 1926. The recipes are family favorites, most are simple meals; however, there are a few wonderful 'company's coming' selections for special meals.

Favorite Recipe

Chicken Curry

  • 1 large whole chicken (yield 3 cups) Reserve 2 cups stock
  • 4 Tbs butter
  • 2 small onions, chopped
  • 2 large apples, chopped
  • 6 ribs of celery, chopped
  • 4 Tbs flour
  • 2 Tbs curry powder
  • 2 cups chicken stock
  • 1 cup milk
  • salt & pepper to taste

Boil chicken, pull from bone and cut in pieces to yield 3 cups. Reserve 2 cups of stock. In a large skillet, saute'onions, apples and celery in butter. Then add flour, curry powder, 2 cups of chicken stock, milk, chicken, salt & pepper. Simmer about 1 hour. Serve over rice with one or more of the following condiments: Chutney, peanuts, peach and strawberry preserves, chopped boiled eggs, coconut, bananas, bacon bits and pickles. Serves 8.
