Our club is a member of the General Federation of Women's Clubs.

Favorite Recipe

Country Captain, President Franklin D. Roosevelt's Favorite Dish

  • 1 hen or 2 fryers
  • 3 onions, cut up
  • 2 T. butter
  • 1 c. chicken broth
  • 3 green peppers, cut up
  • 1 c. raisins or currants
  • 1 pod garlic, minced
  • salt and pepper
  • 1 c. nuts, any kind, chopped
  • 1 lg or 2 sm cans tomatoes
  • 1 lg or 2 sm cans mushrooms
  • 1 tsp. curry powder or to taste
  • 1 tsp. thyme or to taste
  • 1 sm can tomato paste
  • 2 c. boiled rice, any kind, wild is best

Boil chicken until tender, skin, debone and shred, reserve 1 cup chicken broth. In large skillet, fry onion in butter. Add peppers, raisins, garlic, salt, pepper, nuts, tomatoes, mushrooms, curry powder, thyme and tomato paste and simmer 15 minutes. Add chicken and 1 cup broth. simmer 60 minutes. Serve over rice and garnish with additional peppers, nuts, raisins.
