Acorn Squash With Brown Sugar

  • 2 acorn squash, peeled and cut into 2-3 inch chunks
  • 2 T. butter or margarine, melted
  • 4 T. dark brown sugar
  • 2 T. lemon juice
  • raisins, optional
  • nuts, optional
     
 
Place butter, squash, and raisins in oven casserole. Toss thoroughly. Sprinkle squash with sugar, lemon juice, and nuts and toss again. Cover casserole with aluminum foil. Cover and bake in 350 oven for 20 minutes. Remove foil and continue baking until squash is tender (easily pierced with a fork) and looks glazed. This should take about 20-30 minutes. Stir occasionally to distribute the melted butter and sugar. Serve one-fourth of the squash to each person, topped with melted butter and brown sugar. Add additional butter, if melted away during cooking. Garnish with raisins, dried cranberries, chopped walnuts, pecans, etc. if available.
