Sausage Scallopini

  • 1 lbs Italian sausage
  • 2 large green peppers, chopped
  • 2 large red peppers, chopped
  • 1 large onion, chopped
  • 1 (29-oz) can crushed Italian tomatoes
  • 1 bay leaf
  • tsp. oregano
  • tsp. sweet basil
  • T. sugar
  • 1 (4-oz) can sliced mushrooms
  • 4 T. olive oil Salt to taste
Preparation Boil sausage for 30 to 45 minutes. Let cool. Cut into -inch round pieces. Set aside. In a large pot, heat oil over medium heat. Add onions and a pinch of salt and stir 4 to 5 minutes or until translucent, but Do Not brown. Add peppers and stir for 2 to 3 minutes. Add in the can of crushed tomatoes and stir. Add in bay leaf, oregano, sweet basil, sugar and salt to taste. Cook for 15 to 20 minutes over medium heat. Remove the bay leaf. Add sausage and drained mushrooms, and then simmer for 1 hour to 1 hour and 30 minutes, stirring occasionally. Serve over your favorite pasta.
